Method

  1. To make the Bacon-Wrapped Scallops, first wash the scallops well and remove the coral (the red part) so you’re left with just the white, meaty part. Pat the scallops dry with paper towels and wrap each one in a slice of bacon.
  2. In a nonstick skillet, gently heat a drizzle of extra virgin olive oil with a sprig of rosemary to infuse it. As soon as the oil is hot, remove the rosemary and cook the scallops over high heat for one minute per side.
  3. Deglaze the scallops with the brandy and, once it has evaporated, turn off the heat and finish with a pinch of salt and a sprinkle of ground black pepper. Your Bacon-Wrapped Scallops are ready to serve right away. Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

If you like, you can replace the bacon in the recipe with the same amount of pancetta coppata (an Italian cured pork); and if you don’t care for the boozy note of the brandy, you can deglaze the Bacon-Wrapped Scallops with a small glass of dry white wine.

Tips

When you deglaze the Bacon-Wrapped Scallops with the brandy, watch out for any flames that may flare up. If that happens, immediately put a lid on the skillet to smother the fire.

Storage

Bacon-Wrapped Scallops should be made and served right away, so we don’t recommend storing them.
