Method

  1. To make the Bacon-Wrapped Lime Shrimp, start by cleaning the shrimp. Rinse the tails carefully under running water and pat them dry with paper towels. Remove the shell, but leave the tail fin intact.
Bacon-Wrapped Lime Shrimp, step 1: shrimp tails peeled with the tail fin left on
  2. Put the shrimp tails in a large bowl and season them with a drizzle of olive oil, the lime juice, the thyme leaves, a pinch of salt and a pinch of pepper. Stir to coat the shrimp and let them marinate for about 15 minutes.
Bacon-Wrapped Lime Shrimp, step 2: shrimp marinating in a bowl with lime juice, thyme and olive oil
  3. While the shrimp marinate, cut the bacon slices in half. Preheat the oven to 250 °C (480 °F) in conventional mode. When the marinating time is up, take a shrimp, let it drain, wrap it in a slice of bacon and secure it with a toothpick. Continue in the same way until you have used up all the ingredients.
Bacon-Wrapped Lime Shrimp, step 3: shrimp wrapped in bacon and secured with toothpicks
  4. Place the shrimp on a baking sheet lined with parchment paper and cook under the broiler for about 10-12 minutes, turning them halfway through. Tips

For our Bacon-Wrapped Lime Shrimp we chose fresh shrimp, but you can also use frozen ones if you prefer, as long as they are not precooked. If you use frozen shrimp, we recommend thawing them in the fridge overnight.

Storage

Bacon-Wrapped Lime Shrimp are best eaten right away, but if you do have leftovers they keep in the fridge for one day in an airtight container. Of course, you will need to reheat them before eating.
