Method

  1. To make the Almond and Lemon Crusted Salmon, start by cleaning the fish carefully: remove any pin bones with kitchen tweezers and, if you like, remove the skin, although you can leave it on for convenience.
  2. Put the peeled garlic clove, the blanched almonds, the bunch of fresh parsley and the torn slice of sandwich bread into a small food processor.
  3. Pulse for a few seconds until evenly chopped; then transfer the mixture to a bowl and add the grated zest of half a lemon, a pinch of salt, a grind of pepper and a drizzle of extra virgin olive oil, mixing well to blend the flavors.
  4. Take an ovenproof baking dish (ceramic or Pyrex glass), grease it lightly with a little oil and place the salmon fillet in it.
  5. Cover the whole surface of the fish with the almond crumb you just made, pressing gently with your hands or the back of a spoon so it sticks well to the flesh.
  6. If you like, add a few sliced almonds over the top for extra crunch, drizzle with one last bit of oil and bake in a convection oven preheated to 180 °C (350 °F).
  7. Bake the salmon for about 20-25 minutes, checking it depending on the thickness of the fillet; for the last few minutes you can switch on the broiler to brown the crust, taking great care not to burn the almonds.
  8. Once it’s ready and nicely golden, take your crusted salmon out of the oven and serve it immediately, piping hot. Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

This lemon and almond crust is extremely versatile: try it on other kinds of fish too, such as fresh tuna steaks, swordfish or monkfish, for equally tasty main courses.

Tips

To personalize the dish, you can add other herbs to the crumb mixture, such as fresh thyme or oregano. If you don’t like garlic, you can safely leave it out without affecting the result. Remember to keep an eye on it under the broiler so the almonds don’t turn bitter.

Storage

It’s best to eat the crusted salmon right after making it, to fully enjoy the crispness of the crust. If there are leftovers, you can keep them in the fridge in an airtight container for one day at most.
